Recipe of the Week: Sooo good!!

Mini Pizza Pockets
Whole Wheat Pizza Dough (or regular refrigerated pizza dough)
1 1/4 cup pizza sauce
1 cup shredded mozzarella cheese
3/4 cup Parmesan cheese, shredded
1 cup cooked chicken, shredded ( can also do crumbled sausage or a piece or two of pepperoni)
3 tablespoons fresh basil, chopped
1 egg
Instructions:
Preheat oven to 400.
Roll out pizza dough to a 1/4-inch thickness; cut into 3-inch rounds.
In a small bowl, mix together pizza sauce, mozzarella, 1/2 cup Parmesan cheese, chicken, and basil under combined.  Fill one side of the pizza rounds with chicken and cheese mixture.  Take the other half of round and fold over to close and press on sides to seal.  It should look like a mini calzone.  Continue with remaining rounds.
Whisk egg in a small bowl and brush on tops of sealed pizza pockets and evenly top with the remaining 1/4 cup shredded Parmesan cheese.  Poke a small hole on each.  Place on pan and bake for 15 to 20 minutes or until golden brown on tops.
Serve warm with pizza sauce.
Makes about 8 to 10 mini pizza pockets.
